What is different about the food you cook at work and the food you cook at home?
I cook my families handed down recipes at home.
The food I cook at work usually takes far more prep and ingredients then my home cooking.
I only create desserts at work, so my home meals are primarily savory lunches and dinners. I only make dessert at home if there’s an occasion.
What is the most important skill that you learned while working in the kitchen that has changed the way you cook at home?
Knife Skills : Knife skills are certainly something I began to utilize at home once I gained the skills at school and work.
Different styles of cooking and different uses for flavors.
Prep is so important. Before you turn on the heat, make sure you have set yourself up for success by having your ingredients chopped and nearby : Mise En Place! Having everything set and scaled ready to go in front of you is SUCH a time saver and makes the process go much smoother.
What is the most important skill for a home cook to master?
*Especially for baking, it’s very important to understand your mixing methods and why you blend some ingredients with others before adding to the main mix. The way something is mixed can DRASTICALLY change the outcome of your product.

*Know your palate. If you like things extra salty or spicy or sweet, know that and adjust any recipes you find to fit your preference.
